Dolianova “Rosada” Rosato Cannonau di Sardegna DOC 2023 – Country: Italy – Capacity: 0.75 Dolianova Rosada, the other Cannonau. The one vinified in pink. Cantina Sociale di Dolianova proposes it. Made from 100% Cannonau grapes, the winery’s historic vintners harvest the best grapes in the vineyards adjacent to the winery. Here the soil is of medium consistency, composed of clayey limestone of Miocene origin and, above all, the climate is sub-arid. Processing begins with the destemming of the grapes as soon as they reach the winery. This is followed by cold maceration lasting about 6 hours. After racking, the must obtained is clarified by cold static decantation and the clean fraction is inoculated with selected yeasts. The fermentation phase follows, lasting approximately fourteen days. At the end, the wine is decanted and stored at a low temperature until bottling, in order to maintain its characteristics of freshness and fragrance. After all, this is a wine that offers its best if consumed within the year following the harvest. Claret pink in colour, the nose reveals a delicate and elegant perfume, with notes of cherry and strawberry. In the mouth, however, it is fine, fruity and endowed with good structure and persistence. On the table it goes well with delicate hors d’oeuvres, cured meats, risottos and grilled white meats.
