The grapes come from the company’s vineyards in Nervesa della Battaglia, in the province of Treviso. Harvested by hand in September, the grapes are delivered to the winery to begin the delicate transformation phase. Soft pressing and static decantation make it possible to obtain the base must, which undergoes alcoholic fermentation in steel at a controlled temperature. We then proceed to frothing, using the Charmat method, which is long in this case, as the wine remains in contact with the yeasts for about 7 months. Straw yellow in colour, in the glass this wine reveals a pleasant perfume of fresh fruit, with hints of Golden apples in clear evidence. In the mouth, however, it is above all harmonious and savoury. Pleasantly aromatic bubbles, it presents clear notes of freshness. Good already, it is a wine that can also give its best if left to rest in the cellar for a few months. It certainly evolves for at least 36 months. Perfect as an aperitif, it is also suitable for the whole meal. Mainly recommended with white meat and fish. Goes well with fried fish and shellfish.
