Franz Haas “Manna” Vigneti Dolomiti IGT 2022 – Country: Italy – Capacity: 0.75 Franz Haas It is called Manna, and it is one of the most unusual wines from the Franz Haas cellar. First produced in 1995, it is a cuvée, i.e. a blend, of different grape varieties. Riesling and Chardonnay, for the most part, with Gewürztraminer and a small percentage of Sauvignon Blanc. As of 2013, a part of Kerner was also added to this blend. The vineyards of the five varieties are located at altitudes between 350 and 800 metres above sea level. The ripening periods of the different varieties unfortunately do not coincide. For this reason, they are harvested and processed separately. Chardonnay and Sauvignon Blanc are fermented in barriques. While Riesling, Gewürztraminer and Kerner ferment in steel tanks to preserve their fresh component. The young wines are then blended and, after a period of about ten months on the fine lees, the finished wine is bottled and further matured in the bottle for a few months before final release. Golden yellow in the glass, thanks to its special characteristics Manna seduces with a complex and layered bouquet that brings to mind notes of elderberries, pistachios and rose petals. In the mouth, it impresses with its complexity and concentration, combined with a soft elegance and mineral structure. A versatile and long-lived wine, it is a white that continues to evolve in the bottle, giving new emotions every time you have the chance to taste it. Excellent with Japanese cuisine, hence sushi and sashimi.
