Le Thadee “Du Rasole” Bianco Umbria IGT – Country: Italy – Capacity: 0.75 Le Thadee Du Rasole originates in the heart of Umbria, precisely in Montefalco. Hilly vineyards at an altitude of 366 metres above sea level. Du Rasole, Umbria Bianco IGT, is a blend of Grechetto (85%) and Trebbiano Spoletino (15%), two grape varieties that are symbolic of Umbria. Grechetto, historically grown in this region, is known for its ability to produce wines of great structure and persistence, with citrus and floral notes. Trebbiano Spoletino, for its part, less widespread but equally prized, brings freshness and lively acidity to the blend. The grapes are harvested by hand in late September and early October, in small 15 kg crates, to ensure that the bunches arrive at the winery in optimal condition. Selective harvesting allows only the best grapes to be chosen. After destemming and crushing, the grapes undergo a soft pressing followed by fermentation in temperature-controlled steel tanks, preserving fresh and fruity aromas. Finally, a brief period of elevation in contact with its fine lees and weekly btonnage gives the wine greater structure and complexity. Brilliant straw yellow, Du Rasole offers an elegant and complex bouquet on the nose. Exotic notes of passion fruit and candied lemon, followed by hints of acacia and gooseberry enrich the olfactory profile with a delicate floral sweetness. In the mouth, it is savoury and full, with a vibrant acidity that makes it fresh and lively. A young and fresh wine, this Umbrian white is meant to be enjoyed within a few years of harvest. Perfect with fish starters, shellfish and seafood. Try it also with a seafood risotto or with a nice baked fish.
